Watermelon is one of the simplest joys in life. It is perfect in every way yet somehow made even better by mint. I love grilled watermelon but seeing as I live in a tiny apartment with no grill... I decided to compromise. I was not disappointed.
Start by warming 1 1/2 tablespoons of coconut oil in a pan over medium heat. Add 5 or 6 chopped up mint leaves and let sit for a few minutes. Add 12 watermelon cubes (about 1 inch by 1 inch) and raise heat to high. Cook until color changes from red/pink to orange/red then flip over and cook on the other side. Garnish with more mint. (If you want) and enjoy with some Yerba Mate.
I can't wait to try this with some different fruits. I'm thinking plums, peaches, and maybe even grapefruit?
