It's Valentine's Day whether I like it or not and love is in the air. Do you know what I love? Bacon. Who doesn't? (Except vegans.) Bacon is the way to anybody's heart. Dip it in chocolate and it's that much better. If you need a last-minute gift for your boo, your best friend, your parents, or even just want to treat yourself, why not chow down on some salty, decadent chocolate-covered bacon? It takes about 30 minutes and it is oh so worth it. (Oh, and since we found out about those pesky "fat guidelines" being kind of a sham, these are mostly guilt-free.)
- 5 Strips of bacon. Any bacon will do but I used Uncured Black Forest. It's got a deep, rich taste that complements the chocolate.
- 1/2 cup of chocolate. I used a mix of Ghiradelli 100% cacao bars, Ghiradelli 85% melting chips, and Nói Síríus 72% bars. I used a knife to cut the bars into smaller pieces.
- Sea Salt (Optional. In the spirit of V-Day, I used a mixture of Himalayan Pink Sea Salt and Fleur de Sel.)
What to do:
Start by cutting your bacon into bite-sized pieces. Keep in mind that they will shrink in the pan so try to keep them over an inch and a half long. Fry 'em up to your liking and place them on a paper towel. (In case you didn't know, that little trick makes it crispy!) I did half of it extra crisp and the other half a little softer because I'm planning on giving them as gifts and everybody has a different bacon preference. While the bacon is cooling, melt the chocolate. You don't have to get fancy with a double-boiler, the microwave will work just fine, especially since you'll be melting such a small amount. Start with 30 seconds on 50% power. Remove, stir, and repeat until chocolate is smooth. Once smooth (see photo below) you're ready to dip! I only did half of the bacon dipped in chocolate but feel free to immerse the whole dang thing. Set on parchment paper and sprinkle with some salt. Pop it in the freezer for the chocolate to harden quickly.
It tastes as good as it looks. Be sure to keep it refrigerated and to eat it within a day or two. This would be great for a romantic Netflix marathon along with some blackberries, cheese and red wine. Best part? It's a super low-carb treat so it's keto-friendly! (In moderation.)
